Chef’s profile
Rodrigo Fernàndez started working in the kitchen in home country: Uruguay. Upon realizing that this was his passion he studied for 3 years in the Hotel School of Montevideo.
After finishing his studies he decided to leave his home town and gain experience in Europe, he wanted to learn from the best chefs and after spending some time in a Michelin starred restaurant in the French Basque Country he started working at L’Hostellerie de L’Abbey de la Celle, one of the properties of the Alain Ducasse Group.
He was part of the chefs team of Alain Ducasse, leaded by Christophe Martin, that was chosen to open the first Italian property of the group.
After a few years with the Alain Ducasse Group he decided to continue his path working in Michelin starred restaurants in Italy in order to learn the different nuances of the Italian cuisine before joining Relais Monforte.
He has a passion for traditional local recipes, which he likes to rearrange in a more contemporary way, and for always looking for the best ingredients the market is offering according to the season.
